We start our exploration in the Book of Genesis, where the differentiation between clean and unclean creatures is established well before the formalization of the Mosaic Law. In Genesis 7:2, God commands Noah to take a specific number of animals onto the ark: seven pairs of every “clean” beast and just two pairs of "unclean" beasts. This early command reveals that the understanding and observance of dietary distinctions was known and practiced by God’s faithful followers long before the laws given to Moses on Mount Sinai.
